Look behind the scenes at Grid Iron Waffle Shop and you’ll find the story of owners Elizabeth and Brian, humbly pursuing the American dream. Their idea was born from a mutual love of waffles and quality specialty coffees. The couple also believed that people deserved a different experience than what was currently available, so the couple set out to make their dream a reality in 2007.
Elizabeth and Brian, waffle connoisseurs, took a three-week trip to Belgium to find out firsthand what a true Belgian waffle is all about. The Belgian Waffle, as most of us Americans know it, is not authentic but instead an American take on it. During their excursion to Europe, the couple took trains across Belgium and got off at just about every stop. What they found was waffles were being served everywhere; in fine-dining establishments, cafés, even on the street, where vendors would package them in brown bags and customers would eat them on the go, the way pedestrians will buy hot pretzels from vendors on the streets of New York City. The couple knew they had to bring this back to America. Upon their return, the couple decided to open their business. Collaborating with an award winning coffee roaster, they partnered their waffles with their beverages in the perfect marriage.
Taking their waffle ideas a step further, owners Elizabeth and Brian also discovered that waffles are not relegated to being just a breakfast food. Grid Iron Waffle Shop also offers brioche, whole wheat, focaccia, pizza-crust and biscuit-style waffles that serve as the "bread" for breakfast and lunch sandwiches. Grid Iron Waffle Shop offers a variety of comfort and specialty food and beverages for those who enjoy a mix of European and American ideas.
Grid Iron Waffle Shop also strives to stay on the cutting edge of the coffee and espresso industry. Utilizing a private label blend of organically grown coffees, roasted by one of the most respected leaders in the specialty coffee industry, we provide not only the best quality coffee to our customers, but coffee served the right way. Our award winning coffee roaster maintains personal relationships with all the small farmers who grow and cultivate our beans. This helps insure our beans are grown to our high standards, picked at just the right time, and roasted perfectly.
We continually evaluate and train our baristas on the science behind the coffee bean and proper brewing techniques. Pulling a proper espresso shot is an art form and we employ the best artists around. It is our belief that the best coffee served to the best people must be served the best way. Our espresso based specialty drinks as well as our blended drinks are made perfectly to order with fresh ingredients, never with powders or ready made mixes.
